In order to simplify the vinification process and because it can be very complex to associate one plot with a single vat (due to fluctuations in the weather, yields, etc.) it is possible to combine several plots in the same vat.
However vinifying plots together is not a simple matter either. It is necessary to adapt plot selection according to their characteristics and their qualitative potential. Several criteria must be taken into account when plots are candidates for blending prior to vinification.
The parameters mentioned above are among these criteria: soil type, grape variety, grape quality (health, organoleptic), the plot's history and past blends. The winegrower decides on the blends according to the desired wine profile and availability in the vat room.
For example, if a block of plots of the same grape variety is located on the same soil type with a homogeneous and healthy maturity and a similar organoleptic profile for all the plots in the plot, then they may be candidates to be blended to produce the same wine.
