4.1.6.d What to do if signs of reduction appear

Preventive measures:

  • Try to avoid reduction by correcting nitrogen deficiencies in the must

  • Provide air at the right time, i.e. when the first decrease in density occurs, at around 1020.

Corrective measures:

  • Aeration via pumping over. H2S is very volatile. Oxygen is beneficial to the yeasts and prevents the occurrence of reduction.
