3.2.2.b Additional time when several rounds of picking are required

Several rounds of picking may be necessary on the same plot for several reasons:

  • When the plot has been selectively replanted, i.e. when old vines have been replaced by young vines, it may be necessary to harvest certain vines separately. The young vines in production can express earlier, less acidic, more alcoholic characteristics, requiring them to be vinified separately. The time that these later vines are separated from the rest of the plot can vary and depends on the new vines' quality. At Château Latour, for example, supplementary vines are generally combined with the rest of the plot 10 years after planting. It is possible to blend young vines from different plots in the same wine.

  • A second round of picking may also be considered when plots are mixed, i.e. when two or more grape varieties are present in large quantities on the plot. This practice requires the vines to be labelled for each different varietal. The mixed vines can be harvested separately or integrated into the remaining plot's harvest for vinification.

Two to three rounds are possible:

  • A first round for the young vines in all the plots, which generally mature earlier and are then blended
  • A round for the mixed vines (if there are any) which will be vinified separately
  • A round for the plot's remaining vines
