3.1.2.c Is it advantageous to harvest based on different aromatic profiles?

Tastings make it possible to vary the aromatic profile over a wide range according to the qualitative potential of the plot:

  • In this way, a "risky" plot can be enhanced by adopting a fresher profile. This can be the case when the vines' health is poor or deteriorating, or when the terroir combined with the weather conditions results in significant water stress, causing ripening to be checked, especially on sandy soil. In this case full maturity will never be reached, making it preferable to emphasize freshness.

  • By comparison, a healthy plot (with little risk of disease) whose terroir provides the right amount of water, can enable a wine with a more mature profile to be produced. For the final blend, having a wider aromatic range helps to reveal aromatic complexity.
